A Simple Rainbow Stir-Fry

Looking for something exotic, full of flavour, packed with nutrients, completely healthy, and easy to make? It may seem like a difficult meal to find, but now that specific search is over because here is the meal that checks all those boxes. As this is a quick recipe to make, let’s get to it.


Ingredients:


2 large carrots julienned
1 red pepper julienned
1 yellow pepper julienned
1 onion sliced
1 head of broccoli broken up
100g of sugar snap peas
500g of shelled shrimp 
1 Tbsn of coconut oil
Thumb size piece of ginger grated
The juice of a lime (a lemon will do if you don’t have limes readily available)
1 Tbsn of fish sauce
1 Tbsn low sodium soya sauce
1 tsp crushed garlic
1 Tbsn honey
Thinly sliced chilies to your taste


Method:


1. Prepare all the vegetables beforehand for quick and effective cooking.
2. In a wok or large frying pan, put coconut oil and swirl until the pan is hot.
3. Add the shrimp and quickly cook for no more than 2 minutes, until the meat becomes cloudy and firm and then quickly remove and set to the side. Turn the heat down to medium-high.
4. Add the sliced onions, garlic, chili and grated ginger and cook until onions begin to soften.
5. Add the julienned carrots and cook for a few minutes. Add the broccoli and julienned peppers. 
6. Cook until the peppers start to soften and then the sugar snap peas, fish sauce, low sodium soya sauce, lime juice and honey. Fry for 5 minutes and the sauces are evenly mixed and coating the vegetables.
7. Add in the shrimp and cook for a further 2 minutes.
8. Serve with fresh coriander.



This recipe is designed to be high in vitamins and protein while reducing the amount of carbs and gluten found in regular stir-fry which is made with rice or noodles. This recipe can easily be changed to suit your tastes, slice up some chicken breasts or pork fillet if you don’t like shrimp. Remember, there are no laws against changing up a recipe, take away ingredients you don’t like or add in something you think will work well, so long as at the end, you are able to enjoy good food with good people.
