Every great meal needs a dessert to match as a grand finale, and what could be better than a healthy dessert with a sexy name? This easy-peasy pannacotta recipe will send your taste buds on a trip to the Caribbean while impressing your guests with your superb culinary skills. The best part, it doesn’t require Oliver or Ramsey skills to make. Keep reading for the best pina colada pannacotta recipe right from the personal cookbook of the Homes of Distinction family.

Ingredients:
1 can of coconut cream
250ml heavy cream
4 sheets of gelatine
5 Tbsp. white sugar
½ cup brown sugar
1 cup of finely chopped mint
2 limes
50 ml of cold water in a shallow dish
1 cup of warm water

Method:
Place one sheet of gelatine in the dish of cold water and set aside until soft.
Place the mint, warm water, and 1 Tbsp. of white sugar in a small saucepan and slowly bring to a gentle simmer. Once the mint has infused with the water, add the sheet of gelatine from the dish and stir in until dissolved. 
Pour the mint jelly mix about a fifth of the way into small ramekins and place in the fridge (for a stylish and decorative effect. Tilt at a 35-degree angle while setting). Let sit for an hour or until firm.
Place remaining 3 sheets of gelatine in the dish of cold water and set aside until soft.
Add the coconut cream, heavy cream, and remaining sugar into a large saucepan and bring to a gentle simmer. Be careful not to let the mixture boil over.
Remove from heat and add the soft gelatine sheets, mix until dissolved. Allow to cool slightly and pour into the ramekins with the set mint jelly.
In a small saucepan, mix the rind of the two limes, the juice of one lime, warm water and the sugar together over a medium heat and allow to simmer until a syrup forms.
Slice the remaining lime into thin coins, with a slice from the middle of the fruit to the skin for serving.
When serving, gently remove the pannacotta from the ramekin onto a serving plate. Pour a small amount of lime syrup over the top, twist and place a lime coin and garnish with a few mint leaves to complete the look.
